Ingredients
500 g fresh seasonal greens such as bok choy, Chinese broccoli, or snow pea shoots
3–4 garlic cloves, finely chopped
2 tablespoons cooking oil
Salt, adjusted to taste
A pinch of white pepper
1–2 tablespoons water (optional)
1 teaspoon sesame oil (optional)
1. Prepare the Vegetables
Rinse the vegetables thoroughly under running water to remove any dirt or sand. Drain well before cooking.
If using larger leafy greens like bok choy or gai lan, cut them into bite-sized sections for easier stir-frying and serving.
2. Heat the Pan
Place a wok or large skillet over medium-high heat. Add the cooking oil and allow it to become hot before adding any ingredients.
3. Sauté the Garlic
Add the minced garlic to the hot oil and stir continuously for about 20–30 seconds until fragrant.
Be careful not to overcook the garlic, as it can quickly turn bitter once burned.
4. Cook the Vegetables
Add the vegetables to the wok and stir-fry continuously for 2–4 minutes.
Cooking time may vary depending on the type of vegetables used. The vegetables should remain vibrant in color and slightly crisp while becoming tender enough to eat comfortably.
5. Season the Dish
Sprinkle in salt and white pepper according to your preference. Toss everything well so the seasoning coats the vegetables evenly.
6. Add a Little Water if Needed
If the vegetables appear too dry or are cooking unevenly, pour in 1–2 tablespoons of water. This creates a light steam that helps soften thicker stems while keeping the greens fresh.
7. Finish with Sesame Oil
For extra aroma and depth of flavor, drizzle a small amount of sesame oil over the vegetables just before removing them from the heat.
Give the dish one final toss to combine.
8. Serve Immediately
Transfer the stir-fried vegetables to a serving plate and enjoy while hot.
This simple dish pairs wonderfully with steamed rice, roasted meats, seafood, or other traditional Chinese dishes.
